Holy Guacamole... Fries

This recipe, however, not only made me shriek "whhhhaaa?!," it managed to place a huge grin across my face. Baked Avocado Fries. Almost sounds too good to be true, right? It's everything I could ever ask for in a recipe (not to mention this is something I can ACTUALLY make with the primitive baking skills I have...) If you can't already tell, I'm pretty flippin' excited to try this out... VIA
Ingredients:
1/4 cup flour
1 tsp kosher salt
2 large eggs, beaten
1 1/4 cups panko (Japanese bread crumbs)
2 firm-ripe medium avocados, pitted, peeled, and sliced into 1/2-in. wedges
Directions:
• Slice Avacodo.
• Mix the flour, egg, and panko.
• Place the fries on a drying rack and then on a cookie sheet.
• Spray with olive oil or non-stick spray.
• Bake 20 minutes at 450 degrees.
• Sprinkle with parmesan.

I have a question? the taste of the avocado hot or baken it's awfull, right? one time i taste an "avocado-rice" and it's smell very bad an taste like a burned plastic bag
That's too good to be true! I can't wait to try these. I'd imagine a little hard rind cheese and ground green chile thrown into the breading mix would be incredible too for extra zing.

I don't think you are supposed to mix the eggs with the flour/breadcrumbs... it was really hard to coat the avacdos that way. Next time we try this we will keep the eggs seperate and dip an avacado slice in egg then in the flour/breadcrumbs and then place on the drying rack.
Yea, the instructions on here are worded wrong. You should DEFINITELY not mix the flour, eggs and breadcrumbs. It creates a mess of a mixture that is impossible to use for coating your avocado fries. Instead, use these three ingredients in an assembly line set-up (as shown in one of the pictures above, which makes me even more confused by the blogger's directions): dip your avocado fry in the flour, then in the beaten egg and then in the breadcrumbs; place on cooking rack. I made these last night and was disappointed to have to use double the amount of flour, eggs and breadcrumbs after realizing the error in these set of directions. But once I got it right, the fries were VERY good.
