Cake in a Mug : Holiday Treat
Friday, April 2, 2010 at 7:28PM Happy Weekend and Happy Holidays everyone! I've been terribly swamped at my new job and have missed updating my blog. Today hasn't been much different in terms of business around here, but I did want to take some time to share with you a fantastic treat that comes straight from my friend Mandy's lovely blog, The Love Story of Lime and Clementine. She has a recipe perfect for a special occasion or even a night in: It's 5 Minute Chocolate Mug Cake! Even I'll be able to bake now!

Ingredients:
4 tablespoons flour
4 tablespoons sugar
2 tablespoons cocoa
1 egg
3 tablespoons milk
3 tablespoons oil
3 tablespoons chocolate chips (optional)
A splash of vanilla extract
1 large coffee mug
Add dry ingredients to mug, and mix well. Add the egg and mix thoroughly.
Pour in the milk and oil and mix well.
Add the chocolate chips (if using) and vanilla extract, and mix again.
Put mug in the microwave and cook for 3 minutes . The cake will rise over the top of the mug, but don't be alarmed! Allow to cool a little, and tip out onto a plate if desired.
Such a wonderful idea! I'm a little scared to have this ridiculously quick and easy recipe in my hands- but we all deserve a little treat now and again :) Bon Appetit!
